1 Large Mixing Bowl
1 Small bowl
1 PanCast Iron Skillet
1 Wooden Spatula
- 0.7 pound Ground Chicken (300 grams)
- 1 Egg
- 5 tbsp Breadcrumbs (40 grams)
- 0.5 tsp Salt extra to taste
- 0.5 tsp Pepper extra to taste
- 1 tsp Thyme
- 7 oz Heavy cream (200ml) - can be substituted for half and half but no more than 12% fat content
- 1 tbsp Butter- or Olive Oil
- 5-6 sprigs of Sage Fresh works best but a few tsp dried can be a substitute
- 1 Tbsp Cornstrach can use potato strach, rice strach or any thickining strach you have
- 2 tbsp water
Mix well the meatball components: ground chicken, egg, breadcrumbs and seaseonings.
add butter to the pan and heat until sizzling. form the ground chicken mixture into 1 inch balls and brown on a the pan
when brown and the cream, sage, extra salt, pepper and thyme to taste (don't go overboard as it is well seasoned already)
cook for 10 minutes
mix well cornstarch thickening slurry: 1 tbsp cornstarch with 2 tbsp water. add to the cream and mix until incorporated
The cream will thicken quickley so keep a close eye, cook for 5 minutes until thick
serve hot and enjoy!
